Le climat est continental, plut\u00f4t froid et sec, les vents viennent particuli\u00e8rement de Sib\u00e9rie.<br>Ambonnay est un village de la champagne historique il fait partie des Grand Cru. Les champagnes que nous \u00e9laborons \u00e0 Ambonnay sont structur\u00e9, charpent\u00e9, tr\u00e8s aromatique. Le sol crayeux permet une tr\u00e8s libre expression des c\u00e9pages, d&rsquo;ou le cot\u00e9 marqu\u00e9 du pinot noir et chardonnay.<br>Plus fort en bouche avec une grande longueur, l&rsquo;Ambonnay serait plus un champagne de m\u00e9ditation.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h1 class=\"wp-block-heading\">Le Polisy<\/h1>\n\n\n\n<p>Situ\u00e9 sur la cote des Bar \u00e0 40km au sud-est de Troyes, les terroirs de Polisy sont sous l&rsquo;influence du plateau de Langres, les courants sont plut\u00f4t froid et humide. Parmi les petites vall\u00e9e du vignoble, les terroirs de Polisy, se trouvent sur un sol argileux, le travail du sol est un peu plus difficile et n\u00e9cessit\u00e9 un travail plus pouss\u00e9.<br>Historiquement les terroirs de Polisy \u00e9taient sous l&rsquo;influence bourguignonne. Les champagnes que nous \u00e9laborons \u00e0 Polisy sont dans la finesse, en tension, avec une acidit\u00e9 franche.
